I wasn't at all living in the NES age so a lot of these just don't appeal to me.

You don't really have to have partaken in the past to really get the sense of these.  Just gotta compare the old art with the knew, and you'll see the work put into them to really resemble the original.  I especially like the one for River City Ransom out of those five.

Well yes and no, one main reason people redraw box cover art for old games is to kinda real imagine that cool game that they loved.
For instance I love the game Luigi's Mansion, say someone made a re-imaged box cover art of it.
I of course would love it, but someone who has never even heard of Luigi is not really going to get it that much.

Sure these are good drawings, but this just doesn't catch my attention.

That little something is really just called Nostalgia factor.  You see something that you remember, and it hints a sense of nostalgia into something that you know.  I understand what you mean with that, since Nostalgia factor usually has much to do with the appreciation of past games.(especially with the style they've been presenting Mega Man 9 & 10)  What I was referring to was admiring the effort the person put into recreating the box art.  You should know that art isn't as easy as scribbling on a piece of paper.
